August Recipe Suggestions for All the Seasonal Veggies
The recipe suggestions this week have a slightly different format. I’ve broken it down into a couple different meal ideas, and there’s something for the vegans, vegetarians, and omnivores. I’m working on getting my own recipes to share as well as lots of meal planning tips which I’ll start sending out into the world this fall!
Also, this *may* have turned into an eggplant appreciation post and I’m not mad about it!
Snacks/Tapas
Eggplant
I am JUST NOW learning what a range eggplant has on the food scene. I’m currently obsessed with the veggie for snacking. I made my first baba ganoush this weekend and it was AMAZING. If you have kids and they like hummus this could be a great swap.

Honey
It has been a rough few years for local bees, but we can usually manage to find a jar or two. It looks like most hives have done pretty well this year so get ready for a honey haul!
Zucchini
I had to double check and be sure I hadn’t shared this recipe yet because I’ve been making it non stop since July. Also great for eggplant slices! Hot tip, Hilltop Fruit Market sells almond meal in bulk which you’ll need for this recipe.
Breakfast
Eggs
Eggs are usually a pretty reliable local ingredient most of the year, so I love making egg cups for breakfast as a quick grab-n-go. This recipe comes from Gina of the Fitnessista who also happens to have fantastic workouts for postpartum Mamas.

Lunch
Microgreens
Not a formal recipe but I love grilling some salmon on a cedar plank, then combining it with avocado and diced tomato to make a salmon salad. Spread it on a crostini and top with microgreens. Salmon can be intimidating but if you have a good source for wild caught, it bakes so easily in the oven too, this is a super simple lunch go-to.

Cucumbers, Tomatoes, Peppers
Potato
I am not kidding when I say this recipe had my mouth watering. When the Korean Vegan posted this on her Instagram I was immediately searching her site for the recipe. I had to have it!
Dinner
Eggplant
This dish tastes as beautiful as it looks. I made this possibly once a week in my third trimester with Amelia last summer. The crunch of the eggplant, gooey mozzerella…perfection.
Okra
Still working to get on the Okra bandwagon! This recipe looks so good with the berries, I love these flavor combos w/ the grilled okra.
Pork
Wildom Farm has a lovely pork shoulder I’ve made in the crockpot to make these carnitas. A lot of other local farms and butchers should have some variety of this cut to be able to make these carnitas. I recommend making tacos or nachos for an easy weeknight meal.
Dessert
