Peak Summer Meal Ideas
We are deep into our kitchen renovation project, so I have not been cooking as much. It has also been muggy and hot, so I’m sure a lot of you are in the same boat not wanting to turn on the oven. Hopefully this week’s suggestions send a little local food inspiration and some non-oven cooking options!
Cucumber

I can’t imagine a better combination of my favorite summer vegetables: cucumber, tomato, peppers, corn and tomatoes. The Fit Men Cook is a new blog I’ve been following and every new recipe he posts looks so good, I can’t wait to try more. I bet this recipe would also be delicious with orzo instead of rice...yumm!
Zucchini
Double Chocolate Zucchini Bread from What’s Gaby Cooking
Baking with zucchinis is the perfect solution for July and August when those veggies start to get too big to handle! It is also a great way to use up an over abundance of them and freeze one of the breads to have on hand for later in the winter, etc., or for picky eaters! I will definitely be making this tonight!
Onions
Potato Onion Donuts from The Korean Vegan
I used to hate onions when I was a kid, but now I make sure to add them to my CSA choices almost every week. I’m obsessed! I found the Korean Vegan when searching for different vegan and vegetarian cookbooks online and pre-ordered her upcoming book. She posts the most beautiful videos on instagram, sharing stories while cooking amazing Korean inspired vegan dishes. This one had my mouth watering. Who wouldn’t love a potato onion donut??
Peppers
Curried Chickpea Salad from Eating Bird Food
Peppers are seriously popping this time of year. So many farms have a ton of different varieties, so if you happen to pick up a spicier variety, don’t be afraid to add one (But just one) to this recipe. The curry is such a perfect kick for this cold salad, and it comes together super easily, although it may seem like a lot of ingredients. It is a Sheaffer family favorite.
Mushrooms
I am still not on the mushroom bandwagon yet, but I keep trying them. Since I love leeks and of course tapas, this is definitely a recipe to add to my list of things to try. Bryant Terry is a vegetable genius so I’m sure this is super good. Let me know if you try it!
Blueberries
Yogurt Whipped Cream with Fresh Berries from Food 52
For anyone lucky enough to snatch up possibly the end of the local berries for the season, try them fresh with some whipped cream made from yogurt! We had this for dessert last night and it was fantastic. A perfect “no baking required” dessert. I couldn’t stop dipping!
